Recipe: Scotch Eggs

One of my favorite recipes that we make is scotch eggs! It's delicious for breakfast or dinner!

What you need:

16 large eggs
3 pounds ground sausage (We use Bob Evan's mild, hot and sage)
Bread crumbs
A splash of milk
No fear of getting messy! ^_^

1.  Hardboil 14 eggs. I put them in a pot and cover them with water until the water is 1 inch above the eggs. Once the water reaches boiling I take it off the heat and let it sit for 12 minutes. If you're using smaller eggs you can adjust the time from the website.

2.  After the eggs are boiled and you cool them with cold water/ice, peel them.

3.  Mix the ground sausage together in a bowl.
4.  Whisk two eggs and a splash of milk in a bowl. Set aside.
5.  Put flour and bread crumbs in a separate bowl.
6.  Line cookie sheets with foil and preheat the oven to 350 degrees.

7.  Encase the eggs in the ground sausage so they are covered completely.
8.  Dredge the sausage-encased eggs in the flour, then egg then bread crumbs.

If you have a helper it will be a lot easier!

You will get messy! XD

Once all the eggs are encased in sausage and dredged it's time to bake them!

9.  Bake scotch eggs at 350 degrees for 45 minutes.

They are so delicious! You can eat them at any time! :D

What crazy things have you done with your eggs?
